[RECIPE] Delicious Mexican Breakfast Recipes

When you think of famous Mexican foods, you might think of such culinary delights as tacos, burritos, enchiladas and so on, but what about Mexican breakfast foods? Mexicans love to eat big, hearty meals and breakfast is no exception. A good breakfast is important in every culture and Mexicans love to start their day with a delicious Mexican food recipe.

Typical Mexican breakfasts vary between the different regions in Mexico but tortillas are the defining element of Mexican breakfast dishes.

Mexicans use tortillas like other nations use bread and you might find breakfast burritos or breakfast tacos on a Mexican menu. Tortillas are unleavened and often made with maize flour, and they have been around for thousands of years.

Huevos rancheros is a typical Mexican breakfast and this is made by topping a tortilla with fried eggs and adding some hot sauce. Eggs feature in many breakfast recipes actually and Mexicans eat them boiled, scrambled or fried for breakfast. Omelets are another way to use them. If eggs are on the breakfast menu, hot sauce is usually not far away.

Mexicans enjoy eating fresh produce at every meal and this includes fruit and vegetables. Tomatoes, corn, beans, cilantro and fresh fruit are all served at breakfast time in Mexico. These ingredients also feature in many other Mexican recipes.

Mexican Breakfast Drinks

Hot chocolate and coffee are equally popular at breakfast time in Mexico. A thick hot chocolate called champurrado is a delicious, cinnamon-infused concoction, which is an enjoyable and warming drink for a cool morning.

Crusty rolls called bolillos are often dipped into milky coffee or Mexican hot chocolate. Sweet chocolate, fruit or nut pastries might be served with coffee or hot chocolate. A lot of Mexicans have a sweet tooth.


Recipe for Corn Pancakes with Cilantro and Scallions

The following recipe is guaranteed to fill your family up at breakfast time. These corn pancakes contain eggs, corn kernels, scallions and cilantro and they are filling and delicious. Sour cream and mild tomato salsa are great accompaniments.

If you normally have your pancakes with maple syrup, why not try this tasty Mexican variation? This recipe makes enough to feed a family of four.

You will need:

    1 egg
    1 cup yogurt
    1/2 cup all purpose flour
    1 teaspoon baking powder
    1/4 cup chopped fresh cilantro
    1/3 cup chopped scallions
    2 tablespoons vegetable oil
    1 teaspoon sugar
    1/2 teaspoon baking soda
    1 small jalapeno, seeded and chopped
    1/3 cup cornmeal
    1/4 teaspoon salt
    1 cup cooked corn kernels
    Sour cream and mild tomato salsa, to serve


How to make it:

Sift the flour into a bowl, with the baking soda, baking powder, salt, and sugar. Stir in the cornmeal.

Beat the eggs, yogurt, corn, scallions, cilantro, jalapeno, and vegetable oil in another bowl, and then add this mixture to the flour mixture.

Heat a skillet over a medium high heat and brush it with oil. Ladle some of the batter into the hot skillet and cook it until there are little holes. Flip the Mexican pancake and brown the other side.

Repeat this until you have used all the batter. Serve the pancakes with sour cream and mild tomato salsa.

  1. These were awesome! I used two eggs instead of one and used two jalapeno peppers and 1c. frozen corn. A real success with my guests. This will definitely be made in my kitchen again!
    I made a fresh salsa with cherry tomatoes halved, cilantro, jalapeno, green onions, lime, avocado and red onion. PERFECT! Thank you for sharing...
